Genomic insights of Salmonella isolated from dry fermented sausage production chains in Spain and France
A study investigating 173 Salmonella isolates from dry fermented sausage production chains in France and Spain identified ten serovars and thirteen sequence type profiles. The most common serovar was the monophasic variant of S. Typhimurium, found in pig carcasses. The serovars contained the most multidrug resistance genes, with 91% of strains carrying these genes. Salmonella monitoring and characterization are crucial due to its multidrug resistance and persistence in dry fermented sausages.
